Yummy shakshuka my way:) Preheat the pan and medium heat, add some olive oil by eye at your taste (I cook by eye always, by the way:), then add home made greenery mix (I have a separate recipe for it here). Now mix the greenery in the pan and add eggs. Cover with lid. Now comes the vital part – watch the eggs cooking. You do not want to miss the moment when egg white protein starts to turn white. Add some garlic salt, pepper and any other spices you like. Now cover with lid and cook until the egg whites turn fully white, but the yolk is still yellow and runny. Now add tomatoes, tomato paste or diced canned tomatoes. I prefer tomato paste with chunky diced tomatoes and spices like basil and oregano. Add what you prefer and turn the heat to low, this is crucial!:) Before serving sprinkle with feta cheese, parmesan, more oregano leaves and fresh basil. Vuala! Yummy! Come back for more!
